- 3 garlic cloves, minced
- 1 teaspoon minced shallot
- 1 cup orange juice
- 1 tablespoon balsamic vinegar
- 3 tablespoons honey
- 1 tablespoon ground ancho chili pepper
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
- 1 salmon fillet (1 pound)
- 2 teaspoons canola oil
- 2 tablespoons minced fresh cilantro
Instructions
- 1. In a small saucepan coated with cooking spray, saute garlic and shallot until tender. Add orange juice and vinegar. Bring to a boil. Reduce heat; simmer, uncovered, until reduced to 1/4 cup, 20-25 minutes. Stir in the honey, chili pepper, salt and pepper.
- 2. In a large cast-iron or other ovenproof skillet, brown salmon in oil, about 3 minutes on each side. Brush with sauce. Bake, uncovered, at 400° until fish just begins to flake easily with a fork, 8-10 minutes.
- 3. Brush with any remaining sauce and sprinkle with cilantro.
