- 1/4 cup shortening
- 1/2 cup sugar
- 1 large egg, room temperature
- 1-1/2 cups all-purpose flour
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup orange marmalade
- 1/2 cup chopped pecans, optional
FROSTING: - 2 cups confectioners' sugar
- 2 tablespoons butter, melted
- 1 teaspoon grated orange zest
- 2 to 3 tablespoons orange juice
Instructions
- 1. In a large bowl, cream shortening and sugar until light and fluffy, 5-7 minutes. Beat in egg. Combine the flour, baking soda and salt; gradually add to the creamed mixture and mix well. Stir in marmalade and, if desired, pecans.
- 2. Drop by heaping teaspoonfuls 2 in. apart onto greased baking sheets. Bake at 350° for 10-15 minutes or until golden brown. Remove to wire racks to cool.
- 3. In a small bowl, combine the sugar, butter and orange zest until blended. Add enough orange juice to reach spreading consistency. Frost cooled cookies.
