- 1 cup walnut halves
DRESSING: - 1/3 cup olive oil
- 3 tablespoons white wine vinegar
- 1-1/2 teaspoons Dijon mustard
- 2 garlic cloves, minced
- 1/2 teaspoon sugar
- 1/4 teaspoon dried oregano
- 1/8 teaspoon salt
- 1/8 teaspoon dried parsley flakes
- 1/8 teaspoon pepper
- 2 tablespoons finely chopped onion
SALAD: - 5 cups torn romaine
- 5 cups torn red leaf lettuce
- 1 medium green apple, chopped
- 1 medium red apple, chopped
- 1/2 to 1 cup crumbled feta cheese
Instructions
- 1. Preheat oven to 350°. In a small skillet, melt butter over medium heat; stir in sugar and pepper. Add walnuts; toss to coat. Spread evenly onto a baking sheet. Bake until lightly browned, about 15 minutes, stirring every 5 minutes. Cool on a wire rack.
- 2. Place dressing ingredients in a blender; cover and process until blended. Place salad ingredients in a large bowl; toss with dressing. Top with walnuts. Serve immediately.
